Some 50 years ago Dried Apricots were just a by-product for the farmers in Malatya. A few trees bordering the fields produced annual crops of probably less than 500 tons. Today, orchards spread all over Malatya (& beyond) and 100 000 tons is considered an average size crop. At harvest fresh apricots are sulphured - for colour preservation, sundried and pitted. Apart from the sulphured apricots, options of a healthy snacking has expanded even further with natural and organic apricots.
